Lentil Quinoa and Nut Salad

by | Dec 17, 2021 | Recipes

Great filling salad full of goodness! Perfect for a vegetarian option, the lentils and quinoa provide a great source of protein and the nuts give the salad a crunch! You can use whatever nuts you have at home 🙂

Ingredients

– 2 tins of organic lentils drained and washed (you can make fresh)
– 1/2 cup chopped parsley
– 1/2 red onion finely chopped
– 4 finely chopped tomatoes
– 1/2 cup cooked quinoa and drained
– handful of currants
– 2 Tablespoons extra virgin olive oil
– 1 lemon juice
– Celtic sea salt to taste

Mix above

Then add below:
– 1/2 cup crushed almonds (pan fry)
– handful of pumpkin seeds (pan fry)
– handful of pine nuts (pan fry)

Add yoghurt dressing:
– 1/2 cup of greek yoghurt
– 1/2 tsp honey
– 1/2 tsp cumin powder
– 1/4 lemon juice

Mix above

Keep yoghurt dressing and the main salad separate until you serve it to keep it fresh.

Enjoy 🙂
