Pate’s make a great addition to antipasto style snacks! Pate’s made from livers, are one of the highest sources of vitamin A, and we are certainly not eating many foods high in vitamin A these days. In fact all organ meats (offal) are highly nutritious and are considered superfoods, when compared to any other part of the animal, but when choosing your organ meats ensure that they are coming from organically raised animals, as this is where the impurities will be found!
PATE (Liver)
320gm organic chicken liver
2 to 3 Tablespoons ghee
1/2 chopped onion
50 oregano leaves
pinch of salt
METHOD
- Melt the ghee in a pan and saute the chopped onions and chicken liver until the liver is just pink inside on a medium heat around 10 to 15 minutes
- Add the oregano leaves a few minutes before the liver is done
- Blend the mixture, add salt till smooth
TIPS
- You can you other herbs instead of oregano
