Muffins
Check out these super quick flourless muffins, very versatile and easy to make, excellent snack food and great for kids. You can make and freeze too!
INGREDIENTS
2 to 3 ripe bananas
1 cup of rolled oats (oats contain a type of gluten and if you can’t tolerate them, try using quinoa flakes or another type of flake instead)
1 teaspoon ground cinnamon
METHOD
Hand blend bananas
Add the oats and cinnamon
Place mixture in muffin trays and only half fill each one, flatten with a spoon (Please note these make a dense muffin so if you fill each muffin more than half way they will not cook in the middle)
Place in the oven and bake for 15 minutes
Tips and Tricks (if you want to change it up)
- add shredded coconut
- add 1 tablespoon of plain yoghurt (makes them fluffier)
- add crushed nuts
- add cocao nibs
- other spices you can use include nutmeg or cloves
