Think chicken salads are boring! This chicken salad is filled with healthy fats great for your brain and the combination with the protein from the chicken is filling and satisfying! It’s time to have your old boring chicken salad have a bit of a kick to it, think outside the square.
Why not add your own elements too start to play around with other vegetables, my favourite are onion, cabbage and of course it’s all in the dressing! This one has a mustard, vinegar but why not try lemon, lime, garlic, extra virgin olive oil or flaxseed oil just stay away from pre-made dressings with sugar and additives!

- 1 small head romaine lettuce
- ¼ Cup chopped walnuts
- 6 kalamata olives halved and pitted
- 1 ripe avocado, sliced
