Rice (Quick Sensational Dish)
Why not make a meal of it, this quick rice dish is simple and easy to prepare. Using either brown rice, wild rice or red rice. These types of rice’s differ to white rice, in that they have not been refined – simply meaning that the bran has not been removed, so you get the fiber too! White rice is basically brown rice that has been changed (refined and processed). Brown rice therefore has more nutrients because of this.Super quick meals like this make great main meals with a salad and veg.Can also be used as a snack with olives.
QUICK RICE DISH
1 cup of brown rice or wild rice or red rice
1 large brown or red onion
1 tablespoon of coconut oil
1 tablespoon of extra virgin olive oil
1/2 cup of parsley/corriander/basil
3 cups of water
celtic/sea salt and peper
– add the rice to the water in a pot and boil rice till soft (keep the lid on the pot to avoid water loss, add extra water if needed), once cooked strain.
– chop onion into small cubes and saute in the coconut oil, in a pan till soft with a touch of colour (do not burn), add strained rice, salt and peper and saute for another couple of minutes, then take off the heat and mix through the olive oil and parsley/corriander/basil.
– add extra spices if needed, serve warm or cold
*This dish can be a main, served with steamed veg and salad or makes a great snack with one of the tahini dips.
*Don’t limit yourself to just using rice, you could replace the rice with quinoa or couscous (although be mindful that couscous contains gluten). The key is in the sauted onion with the seasonings and if onions don’t work for you try using leeks.
