Perfect dish to load up on your veggies first thing in the morning! Additional healthy fats and protein will keep you satisfied until lunch, you can mix up the veggies depending on what you have in the fridge. 


  • 4 eggs
  • ½ small zucchini grated
  • 6 mushrooms diced
  • ½ capsicum diced
  • 2 shallots or small onion
  • 1 tablespoon olive oil


Sauté all ingredients (except eggs) in olive oil in a small shallow pan, once softened add blended eggs, pat the mixture down and cook on a low heat untill eggs harden.


*You can poach eggs instead and sauté vegetables separately.
